Ingredients

1/3 cup (330 ml) flour
3 tablespoons (30 ml) sugar
3 teaspoons (15 ml) baking powder
½ teaspoon (7 ml) salt
1 ¼ cups (310 ml) milk
1 egg
3 tablespoons (30 ml) melted butter
½ teaspoon (1.25 ml) vanilla

Amazing pancakes. An old book about Five Roses flour says that "the secret to making delicate pancakes or waffles is to only stir the batter until the dry ingredients are combined....The pan is hot enough when water droplets dance on the surface...if the pancakes are too cold, they will turn out flat and stiff... too hot, they will brown on the outside even before the middle is cooked ... cook the pancakes until bubbles appear on the top side; flip to the other side. Flip only once during cooking."
Mix the dry ingredients together. In a separate bowl, beat the egg and add the milk. Mix the dry ingredients well; slowly add the egg-milk mixture. Add the melted butter.Mix quickly until the dough is smooth and the consistency is not lumpy.DO not stir, otherwise the pancakes will not be light and fluffy.Transfer 1/4 cup to a hot skillet.Preheat a frying pan over medium-high heat.Top-bubbly, bottom-golden brown-turn it over once.When small bubbles appear on the surface of the pancake, turn it over and finish cooking on the other side.Option with blueberries (or other berries): increase the amount of sugar to 1/3 cup. Bring the milk to 1 cup. Add 1 cup of berries, sprinkled with flour. Cook more slowly than regular pancakesMy favorite variations:Spices: Add 1/2 tsp cinnamon and 1/4 tsp nutmegBanana: Stir the sugar to 1 tablespoon and add 1 mashed banana and a pinch of pepper.With blueberries: Increase the amount of sugar to 1/3 cup and reduce the amount of milk to 1 cup.
