Parm-Style Chicken Sliders

Ingredients
2 teaspoons olive oil
1 cup chopped onion
1 ½ tablespoons chopped fresh oregano
3 garlic cloves, minced
1 pound shredded chicken breast
1 oz grated parmesan cheese (about 1/4 cup)
1 cup divided low-sodium marinara sauce
⅛ a teaspoon of kosher salt
¼ teaspoon ground black pepper
¼ teaspoon ground red pepper flakes
Cooking Spray
8 water rolls or slider buns, cut in half and toasted
3 ounces grated partially low-fat mozzarella cheese (about 3/4 cup)

These Italian-style sliders give the parmesan chicken a summery touch.
Preheat a medium skillet over medium-high heat. Pour the oil into the pan; stir to coat. Add the onion, oregano, and garlic; simmer for 3 minutes or until softened. Place the onion mixture in a large bowl; cool slightly. Add the chicken, parmesan, 1/2 cup marinara, salt and pepper to the onion mixture. Mix well with your hands. Form 8 patties (1/2-inch thick). Refrigerate for 10 minutes.Preheat the grill to high heat.Preheat a grill pan over medium-high heat. Brush the mold with cooking spray. Transfer the patties to the skillet; cook for 10 minutes or until tender, turning once.Place the bottom halves of the rolls on a baking sheet. Put 1 pie on each roll. Sprinkle each of them with 1 tablespoon of the remaining marinade and 1 1/2 tablespoons of cheese. Bake for 90 seconds or until the cheese is melted. Top with basil and half rolls.
