1.8 oz flaxseed flour (about 1/2 cup)
1.8 oz oatmeal (approximately 1/2 cup)
2 ¾ cups certified old-style gluten-free oatmeal
1 teaspoon baking soda
¾ cup peanut butter
2 tablespoons non-dairy buttery paste (such as Earth Balance)
⅓ cup granulated sugar
⅓ cup brown sugar
½ cup mashed ripe banana
½ teaspoon vanilla extract
2 large eggs, lightly beaten

Preheat the oven to 350 degrees.Weigh or lightly spoon the flaxseed flour and flour into dry measuring cups; smooth with a knife. Combine the flaxseed flour, flour, oat flakes, and baking soda in a medium bowl; whisk to combine.Put the peanut butter, buttery paste, and sugar in a large bowl; beat with a mixer on medium speed until smooth. Add the banana, vanilla and eggs, whisking until smooth. Add flour mixture, mini chips and sunflower seeds, whisking until smooth.Place tablespoons on a baking sheet lined with parchment paper, 2 inches apart. Bake at 350 ° C for 12 minutes or until the edges of the cookies are lightly browned. Allow to cool completely on baking sheets before serving.
