Peach Chutney

Ingredients

5 cups chopped peeled peaches (about 1 3/4 pounds)
1 ½ cups finely chopped red onion
½ cup brown sugar
½ cup white wine vinegar
3 tablespoons minced peeled fresh ginger
½ teaspoon salt
1 crushed jalapeno pepper, unseeded
½ cup chopped fresh cilantro
2 tablespoons fresh lime juice

To make

Combine this sweet and slightly spicy seasoning with grilled chicken, pork, or curry dishes. They can also be used to decorate a turkey or ham sandwich. Store in the refrigerator for up to one week.
Combine the first 6 ingredients in a saucepan; bring to a boil. Cover, reduce heat, and simmer 45 minutes. Add the jalapenos. Simmer uncovered for 5 minutes. Remove from heat; add cilantro and juice. Cool to room temperature.
