Pear Preserves

Ingredients
8 Bartlett pears, peeled and cut into 1/4-inch thick slices
3 cups sugar
2 lemons, thinly sliced

The subtle, sweet taste of pears is perfect for pear jam. Pears start appearing at farmers markets in the very beginning of autumn
Cook the pears, sugar, and lemons in a heavy 3-quart saucepan over medium heat, stirring frequently, for 5-7 minutes or until the sugar is dissolved. Increase the heat to medium-high; cook, stirring occasionally, for 30 minutes or until the mixture is thick and golden and the pears are soft. Let cool for 10 minutes. Spoon into 3 (1-pt.) wide-necked jars. Store in the refrigerator for up to 3 weeks.
