Perfect Day Pork & Black Bean Nachos

Ingredients
12 oz ground pork
1 teaspoon chili powder
salt to taste
8 cups unsalted tortilla chips
8 ounces mexican four-cheese blend, crushed
1 15-ounce can of black beans, dried
4 green onions, sliced
½ cup sour cream
1 canned chipotle chili in adobo sauce, minced or more to taste
½ cup salsa and some more to serve
To make
Layers of seasoned ground pork, tortilla chips, grated Mexican cheese, black beans and green onions, baked with salsa and chipotle sour cream.
Preheat the oven to 350 degrees Fahrenheit.Meanwhile, in a medium skillet over medium-high heat, saute the pork, stirring and breaking it into small pieces, until it stops turning pink, 5 to 6 minutes. Remove from heat, add ground chili pepper and salt to taste, then set aside.Place 1/4 of the chips on a large, heatproof dish or 2-3-liter roasting pan, then use a slotted spoon to place 1/4 of the pork on top. Sprinkle with 1/4 cheese, 1/4 kidney beans, and 1/4 green onion. Repeat 3 times to get 4 layers. Bake until the cheese is melted and the nachos are warm, about 30 minutes (if the top is browned, cover loosely with foil).While the nachos are baking, combine the sour cream and chipotle in a small bowl. Add more chipotle to taste and set aside.Top the nachos with a mixture of sour cream and salsa. Serve hot, sprinkled with salsa sauce.
