Ingredients

1 (1 pound) pork tenderloin, peeled and cut into 1/2-inch thick pieces
1 teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon ground cinnamon
1 teaspoon vegetable oil
1 small onion, chopped
3 garlic cloves, minced
чашка cup of salsa or savory sauce
¼ cup raisins
3 tablespoons toasted chopped almonds
чашка cup of shredded light Mexican cheese mix (such as Sargento)
2 tablespoons chopped fresh cilantro
4 (8-inch) low-fat flour tortillas

To make


Place the pork in a large bowl. Sprinkle with cumin, salt and cinnamon; mix well.Heat the oil in a large skillet over medium-high heat. Add the onion and garlic; cook for 3 minutes, stirring occasionally. Add the pork mixture; cook for 2 minutes, stirring frequently. Add the salsa and raisins; simmer for 5 minutes or until the pork loses its pink color and the sauce thickens. Remove from heat; add almonds, cheese and cilantro.Preheat the tortillas according to the instructions on the package. Spread 3/4 cup pork mixture on each tortilla; roll up.
