Pineapple Muffins

Ingredients
1 can shredded pineapple (16 oz), drained, save juice
½ cup butter
2 eggs
1 ⅛ cup sugar
3 cups all-purpose flour
1 tablespoon baking powder
1 pinch of baking soda
½ teaspoon salt
1 cup pineapple juice, if not full, add milk.
1 teaspoon vanilla
sugar as needed
To make
Preheat the oven to 400 degrees.Brush 2 12-hole muffin tins with butter; set aside.In a large bowl, whisk together the butter, eggs, and sugar.Leave out 3 tablespoons of flour. In a medium bowl, combine the remaining flour,add baking powder, salt and baking soda.Mix the milk and vanilla together.Alternately add the milk and flour mixture to the whipped butter mixture. Place the pineapple in a large bowl, sprinkle with the remaining flour, and turn with a large spoon until the pineapple is lightly coated. Roll in batter.Fill each muffin 3/4 full and sprinkle sugar on top. Fill the remaining empty holes 1/2 full with water. Bake until the muffins come off the sides of the pan and are golden brown with crumbs on the sides, or until the dough comes out clean, about 15-20 minutes.
