Popcorn-Crusted Chicken Strips

3 cups plain popcorn flakes
½ teaspoon garlic powder
Salt
½ cup all-purpose flour
1 large egg, beaten
1 pound boneless and skinless chicken thighs, stripped of fat, cut into 1 1/2-inch thick strips
3 tablespoons canola oil
1 tablespoon unsalted butter

Chicken strips in a popcorn crust are the delicious result of covering whole-grain popcorn with regular chicken strips. The result is a crunchy texture that kids will love.
Line a large baking sheet with foil or parchment. In a food processor, combine the popcorn, garlic powder, and 1/4 teaspoon salt until the mixture resembles coarse breadcrumbs. Transfer to a shallow bowl. In a second shallow bowl, add the flour and egg.Roll each piece of chicken in flour, then in beaten egg, then in popcorn crumbs, turning to coat. Transfer to a baking sheet and repeat with the remaining chicken. When you're done, discard the remaining flour, beaten egg, and popcorn crumbs.Heat the vegetable oil in a large skillet over medium-high heat. When the butter has melted, add the chicken, making portions if necessary. Don't clutter the pan. Cook, turning once, until the chicken is browned on both sides and cooked through, about 8 minutes in total. If desired, add extra salt.
