Pork Chops with Apricot Sauce

Ingredients

4 (10 oz) pork chops, center and boned
Salt and pepper
2 tablespoons vegetable oil
½ cup low-sodium chicken broth
½ cup strained apricot jam
2 tablespoons dijon mustard

Turn weeknight dinners from unattractive to fabulous by serving a flavorful pork chop with simple side dishes.
Preheat the oven to 350°F. Drizzle the baking dish with cooking spray. Season the pork chops with salt and pepper. Heat the oil in a large skillet over medium-high heat until it is hot but not steaming. Add the chops and cook until they are lightly browned, about 3 minutes on each side. Transfer the chops to the prepared baking dish and bake in the oven for 7 to 10 minutes.Drain the fat from the pan and add the chicken broth. Bring to a boil over high heat, stirring with a wooden spoon or heatproof spatula to collect browned bits from the bottom of the pan. Cook quickly until the liquid is reduced by half, 3 to 5 minutes. Add the apricot jam and bring the mixture back to the boil. Cook the sauce, stirring, until it thickens and has the consistency of syrup, about 2 minutes. Add mustard.Reduce the heat on the stove to medium and return the cooked pork chops to the pan along with the remaining juice in the roasting pan. Roll the pork chops in the sauce several times to coat them. Drizzle the remaining sauce over the chops and serve hot.
