Pork Chops with Caribbean Rub and Mango Salsa

Ingredients
1 ½ teaspoons ground coriander
1 ½ teaspoons ground cumin
¾ teaspoon sugar
¾ teaspoon ground ginger
½ teaspoon salt
¼ teaspoon ground allspice
⅛ a teaspoon of ground red pepper
4 pork chops with bones in the center (about 1/2 inch thick), 6 oz.
Cooking Spray
½ cup diced peeled mango
½ cup diced plum tomatoes
½ cup chopped cilantro
1 tablespoon red wine vinegar
2 teaspoons extra virgin olive oil

The smoky-spicy sauce also goes well with grilled chicken breasts.
Combine the first 7 ingredients in a small bowl. Rub the pork chops with the spice mixture.Preheat a grill pan over medium-high heat. Brush the mold with cooking spray. Add the pork to the skillet; cook for 3 minutes on each side, or until the thermometer reads 145 degrees (slightly pink).Combine the mango and other ingredients in a small bowl; mix gently. Serve the salsa with pork.
