Pork Chops with Cherry Couscous

Ingredients
3 tablespoons olive oil, divided
4 (6 oz) pork chops with a bone in the center, sliced
1 teaspoon salt, divided
¼ teaspoon freshly ground black pepper
Cooking Spray
1 cup raw couscous
¾ cup boiling water
1 cup coarsely chopped pitted cherries
½ cup chopped green onion

In season, sweet red cherries are a bargain, giving a surprisingly fresh fruit flavor that goes well with pork.
Preheat the grill to medium-high heat.Brush the pork evenly on both sides with 1 tablespoon of olive oil and evenly sprinkle with 1/2 teaspoon of salt and black pepper. Place the pork on a grill rack greased with cooking spray and cook for 4 minutes on each side or until the desired degree of roasting. Let the pork sit for 5 minutes.Place the couscous in a large bowl. Add 3/4 cup of boiling water; cover and let stand for 5 minutes. Uncover and whisk with a fork. Add the remaining 2 tablespoons of oil, 1/2 teaspoon of salt, the cherries, and the rest of the ingredients. Serve with pork.
