Pork Loin Chops with Apple and Shallot

Ingredients
2 tablespoons extra virgin olive oil
4 4-ounce pork loin chops
Kosher salt and freshly ground black pepper
2 shallots, sliced about 1/4-inch thick (about 1 cup)
4 sprigs thyme
2 medium apples (about 1 pound total), peeled and cut into 1/4-inch thick slices
½ cup brut wine or dry cider
1 tablespoon cold unsalted butter

Make the most of the applesauce by sprinkling the pork chops with a delicious mix of apples and shallots.
In a large heavy skillet (preferably cast iron), heat the oil over medium-high heat. Season the pork chops with 1/2 tsp salt and pepper; add to the skillet. Cook until the chops are browned on both sides, about 8 minutes in total; transfer to a plate.Reduce the heat to medium; add the shallots to the skillet. Cook, stirring occasionally, until the shallots are soft and translucent, 6 to 8 minutes. Add thyme, apples, and 1/4 teaspoon salt and pepper. Roll the chops and all the collected juices in the apple mixture and pour the wine into the pan; partially cover and cook until the apples are soft and the wine turns into a thick sauce, about 10 minutes.Transfer the chops to 4 plates. Combine the butter and apple mixture, spread evenly on plates, and serve.
