Pork, Mango, and Tomato Salad

Ingredients
1 ⅓ Grilled pork tenderloin with corn cobs on the cob
1 pack shredded romaine lettuce (10 oz)
1 medium-sized mango, peeled and chopped
1 large tomato, peeled and chopped
1 large cucumber, peeled, seeded and chopped
½ large red onion, thinly sliced
¾ cup canola oil
⅓ cup balsamic vinegar
3 tablespoons honey
2 tablespoons finely grated red onion
1 tablespoon dijon mustard
1 teaspoon of table salt
Freshly ground black pepper

The beauty of this simple recipe is that you don't even need to heat up the stove; just slice and serve the pork cold or at room temperature.Cook for 20 minutes; Just 20 minutes, not including pork
Thinly slice the pork. Arrange the lettuce leaves on 4 plates, top with the pork, mango and the next 3 ingredients. Whisk together the butter and the following 5 ingredients in a small bowl. Add black pepper to taste. Pour over the salad.
