Pork Roast with Potatoes and Carrots

Ingredients
Two 2-to 2 1/2-pound boneless pork loin Casseroles
Salt and pepper
2 teaspoons dried rosemary
6 peeled garlic cloves
4 potatoes for baking, peeled and cut into eighths
16-ounce package of baby carrots
2 tablespoons olive oil

Cooking Time: 10 minutes Baking time: About 2 hours Preheat the oven to 425 degrees. Cut the fat from the roast pork. Sprinkle the pork with salt, pepper and rosemary. Cut the garlic into small wedges. Make holes in the roast meat with a sharp knife and insert the garlic cloves. Place the pork on a wire rack in a baking dish and place in the oven. Reduce the heat to 325 degrees and cook the meat for about 45 minutes. Drizzle the potatoes and carrots with olive oil, season with salt, and place in the pan around the pork. Bake for another 75 minutes, or until the meat thermometer reads 160 degrees. Cover with foil and let stand for 15 minutes before slicing.How children can help: Measure out the ingredients; drizzle the vegetables with oil and sprinkle with salt.
