Pork Tenderloin with Mango Salsa

Ingredients
Cooking Spray
1 (1 lb) pork tenderloin, trimmed
½ teaspoon salt, divided
¼ teaspoon black pepper
¼ cup chopped red onion
2 tablespoons olive oil
1 tablespoon apple cider vinegar
2 teaspoons sugar
½ teaspoon grated lemon zest
1 ripe mango, peeled and chopped
1 serrano pepper, peeled and finely chopped
¼ cup small mint leaves
To make
Preheat a large skillet over medium-high heat. Brush the mold with cooking spray. Sprinkle the pork with 1/4 teaspoon of salt and black pepper. Add the pork to the skillet; cook for 16 minutes or until the thermometer reads 145 °, until it is browned on all sides. Remove pork; let stand for 10 minutes.Combine the red onion and the following 6 ingredients (with the serrano pepper); toss to combine. Sprinkle the mixture with the remaining 1/4 teaspoon salt and mint; toss to combine. Slice pork crosswise; serve with mango salsa.
