To make
The whole family's favorite dish for the fall turns out to be lighter with barely sweetened apples. And instead of the usual pork chops, we prefer low-fat, inexpensive pork tenderloin. Top the dish with a side dish of broccoli.
Combine 1/2 teaspoon salt, garlic powder, paprika, and pepper; sprinkle pork evenly on both sides.Preheat a large skillet over medium-high heat. Add 1 tablespoon of oil to the skillet; stir to coat. Add the pork to the skillet; cook for 2 minutes on each side or until desired browning. Remove from the mold.Add the remaining 1 tablespoon of oil to the pan (don't wipe the pan clean); stir to coat. Add the apples and 1/2 cup water; cover and cook for 6 minutes or until the apples are tender.Open it. Add 1/4 teaspoon salt, sugar, and cinnamon; cook for 2 minutes or until apples are tender and most of the liquid has evaporated to a syrup, stirring occasionally. Serve pork with apple mixture; sprinkle with parsley if desired.
