Ingredients

2 tablespoons duck fat
2 pounds baked potatoes, cut into 4 x 1/4-inch strips (about 3 medium)
½ teaspoon kosher salt, divided
Cooking Spray
6 oz pork sausage, 50% reduced fat%
1 ½ tablespoons butter, melted
2 tablespoons all-purpose flour
2 cups fat-free, less-sodium beef broth
2 ounces fresh cheddar cheese curds
Chopped fresh parsley (optional)

The fresher the curd cakes, the tastier they will turn out. If you can't find local fresh cottage cheese, order it from Ellsworth Co-op Creamery at ellsworthcheesecurds.com or replace them with cubes of casseri cheese. Kasseri, a salty Greek cheese, is close to imitating cottage cheese in texture. (Cheddar is fine, but it doesn't add the texture of cottage cheese.) Potatoes fried in duck fat in the oven give them a rich meat flavor and a great crunchy texture. Look for duck fat at specialty markets or order from amazon.com .
Place a small baking dish in the oven. Preheat the oven to 450 degrees.Carefully remove the hot pan from the oven. Melt the fat in the pan; add the potatoes. Sprinkle the potatoes with 1/4 teaspoon of salt; toss to combine. Bake at 450 ° C for 45 minutes or until golden brown, turning once after 30 minutes.Preheat a large skillet over medium-high heat. Brush the mold with cooking spray. Add the sausage; cook for 5 minutes or until lightly browned, stirring until it crumbles. Combine the butter and flour, stirring occasionally, until smooth. Add the butter mixture to the sausages; cook for 1 minute, stirring constantly. Slowly pour the broth into the pan, stirring constantly; bring to a boil. Reduce the heat; add the remaining 1/4 teaspoon salt and simmer for 3 minutes or until slightly thickened, stirring occasionally. Spoon the gravy over the French fries; top with the cheese cakes. If desired, sprinkle with parsley.
