Powdered Sugar Meringue


3 egg whites
½ teaspoon tartar
¼ cup plus 2 tablespoons sifted powdered sugar
½ teaspoon vanilla extract

To make

Combine the egg whites (room temperature) and tartar in a medium-sized glass or metal bowl; beat until frothy. Gradually add the sugar, 1 tablespoon at a time, whisking until stiff peaks form and the sugar dissolves. Whisk with vanilla.Spread the meringue over the hot pie filling, carefully sealing the edges of the dough. Bake as directed in each pie recipe.
