Prosciutto-Wrapped Basil Shrimp

Ingredients
20 large frozen shrimp, skinless and pitted, defrosted
1 tablespoon chopped fresh basil
1 teaspoon extra virgin olive oil
½ teaspoon lemon zest
½ teaspoon kosher salt
¼ teaspoon red pepper flakes
⅛ a teaspoon of freshly ground black pepper
10 (about 4 ounces) extra-thin prosciutto slices
Cooking Spray
8 lemon wedges to serve

Preheat the grill.In a medium bowl, combine the shrimp, basil, olive oil, zest, salt, and red and black pepper flakes. Mix well and set aside.Place the prosciutto slices on a large work surface and cut the prosciutto in half lengthwise to make 20 pieces. Wrap the prosciutto around each shrimp, leaving the tails sticking out, and thread on an 8-inch skewer. Repeat with the remaining prawns to make a total of 4 skewers with 5 prawns on each.Place the skewers on a baking sheet lightly greased with cooking spray. Saute the shrimp for 2 minutes on each side. Serve hot with lemon wedges.
