Pumpkinseed, Date, and Tahini Bars

Ingredients
⅓ cup of tahini
⅓ cup brown rice syrup
1 tablespoon olive oil
1 teaspoon vanilla extract
½ teaspoon salt
1 ¼ cups barley flakes
1 cup old-style oatmeal
⅔ cup pre-sliced dates
⅓ cup toasted pumpkin seed kernels

Preheat the oven to 350 degrees. Combine the tahini, syrup, olive oil, vanilla, and salt in a microwave-safe bowl. Reheat in the microwave on high power for 1 minute or until bubbles form. Combine the cereal, oatmeal, dates, and pumpkin seed kernels in a medium bowl. Pour the tahini mixture over the barley mixture; mix well to coat. Place in an 11-inch x 7-inch baking dish greased with cooking spray. Sprinkle with quinoa, pressing to adhere. Bake at 350 ° C for 10 minutes or until cooked through. Cool completely in a bowl.
