Quick and Easy Banana-Oat Muffins

Ingredients
2 mashed ripe bananas (about 3/4 cup)
2 tablespoons canola oil
1 egg
½ cup skimmed milk
¾ teaspoon vanilla extract

The remaining muffins can be frozen for up to two weeks.
Preheat oven to 350 degrees Fahrenheit.Combine the bananas and the following 4 ingredients (with vanilla) in a medium bowl; mix well and set aside.Lightly spoon the flour into a dry measuring cup and smooth it out with a knife. Whisk together the flour and the following 5 ingredients (with salt added) in a small bowl.Mix the flour mixture with the banana mixture until they are smooth.Drizzle 9 muffin tins with cooking spray (or use paper tins) and pour 1/3 cup of batter into each one (to keep them full).Bake for 16 minutes or until a wooden stick inserted in the middle comes out clean.
