Quick and Easy Red Beans and Rice

Ingredients

1 pound sausage, smoked with nuts (such as Konekuh), cut into 1/2-inch pieces. small circles (about 4 cups)
6 bacon slices, sauteed and crumbled, with 2 tablespoons of filling remaining
1 ½ cups chopped sweet onion (from 1 large onion)
½ cup chopped celery (2 stalks)
½ cup chopped green bell pepper (from 1 medium pepper)
1 tablespoon finely chopped garlic (about 3 garlic cloves)
2 cans of light or dark red beans (15.5 oz each)
1 can tomato sauce (8 oz.)
2 tablespoons ketchup
2 teaspoons worcestershire sauce
2 teaspoons chili powder
1 teaspoon granulated sugar
½ teaspoon kosher salt
½ teaspoon ground black pepper
Hot boiled white rice to serve
Chopped green onions and hot sauce to serve

Our quick and easy recipe with red beans and rice is the most comfortable dish possible. It turns out creamy and gets a thick texture thanks to smoked sausage, beans and bacon. The use of smoked sausage gives the dish a pleasant depth of taste. Once you have crushed all the ingredients, the whole thing will cook very quickly. Do not drain the water or rinse the beans: this will not only save you time, but will also thicken, and it will seem that they have been simmering for several hours. Increase the heat by adding more pepper or crushed red pepper, or serve a little hot sauce on the side. Finish your meal with an iced beer and hot crusty French bread.
Bake the sausage in a roasting pan over medium heat and cook, stirring frequently, until browned, about 12 minutes. Use a slotted spoon to transfer the sausages to a plate covered with paper towels. Add the remaining bacon, onion, celery, bell pepper and garlic filling to the roasting pan and cook, stirring occasionally, until tender, about 5 minutes.Increase the heat to medium-high; add the beans, tomato sauce, ketchup, Worcestershire sauce, chili powder, sugar, salt, pepper, and cooked sausage and bring to a boil. Reduce the heat to medium-low, cover and simmer, stirring occasionally, for 30 minutes. Sprinkle with chopped bacon and serve with hot boiled rice. Sprinkle with green onions and serve with hot sauce.
