Quick Chicken Noodle Soup

Ingredients
2 cups water
1 box low-sodium, fat-free chicken stock (32 oz.)
1 tablespoon olive oil
½ cup chopped onion
½ cup chopped celery
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 medium carrot, chopped
6 oz fusilli paste
2 ½ cups shredded skinless and boneless chicken breast for grilling
2 tablespoons chopped fresh flat-leaved parsley

Combine 2 cups of water and chicken stock in a microwave-safe bowl and reheat in the microwave on high power for 5 minutes.While the stock mixture is warming up, heat a large saucepan over medium-high heat. Pour the oil into the pan; stir to coat. Add the onion, celery, salt, pepper, and carrot; simmer for 3 minutes or until almost tender, stirring frequently. Add the hot stock mixture and pasta; bring to a boil. Cook for 7 minutes or until pasta is almost al dente. Add the chicken; cook for 1 minute or until completely warmed through. Add the parsley.
