Quick Shrimp Chowder

Ingredients
2 cups organic vegetable stock
2 teaspoons chopped fresh thyme
½ teaspoon freshly ground black pepper
1 tablespoon olive oil
½ cup chopped carrots
½ cup chopped onion
¼ cup chopped celery
2 tablespoons all-purpose flour
1 pound medium-sized shrimp, peeled and pitted
⅓ cup heavy whipped cream
To make
Pour the broth into a 2-cup glass bowl. Reheat in the microwave on MEDIUM-HIGH heat for 1 minute.Combine the broth, thyme, and black pepper in a large saucepan over medium-high heat and simmer.Preheat a medium skillet over medium-high heat. Pour the oil into the pan; stir to coat. Add the carrots, onion, and celery; simmer for 3 minutes or until tender. Add the flour, stirring with a whisk. Add carrot mixture and shrimp to stock mixture; cover and simmer 5 minutes.
