1 teaspoon baking powder
½ teaspoon salt
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
½ cup chopped almonds, walnuts, pecans, or mixed nuts
1 cup fresh raspberries
To make
To make slicing easier, cover and refrigerate the blondie for at least 1 hour before slicing into bars.
Preheat the oven to 350ºF. Line an 8-inch square baking dish with thick foil, leaving at least a 1-inch protrusion on all sides. In a small bowl, combine the flour, baking powder, and salt. Melt the butter in a medium saucepan over low heat. Stir in the brown sugar until smooth. Allow to cool slightly. Remove from heat and whisk in egg and vanilla. Stir in the flour mixture until smooth. Add the nuts.Place the dough on a baking dish, flattening the surface with a spatula. Sprinkle the dough with berries. Bake until the chocolate patties are lightly browned in the center, about 30 minutes. Cool completely in the pan on a wire rack.Using the protruding foil on opposite sides of the mold, remove the chocolate patties and place them on a cutting board. Cut into 16 squares and serve.Note: Nutrient analysis is provided for each blondie.
