Ravioli with Brown Butter and Sage

Ingredients
1 pack 24 oz fresh cheese ravioli
6 tablespoons unsalted butter
2 medium shallots, thinly sliced
16 fresh sage leaves
¼ teaspoon kosher salt
¼ teaspoon black pepper
¾ cup (3 oz) grated parmesan cheese
To make
Prepare a simple recipe for pasta with fresh ravioli and a light sauce for baking.
Prepare the ravioli according to the instructions on the package. Meanwhile, heat the butter in a large skillet over medium-low heat until frothy. Add the shallots and cook, stirring, until golden brown, 1-2 minutes. Increase the heat to medium, add the sage and cook until the leaves are crisp, about 1 1/2 minutes. Remove from heat. Season with salt and pepper. Return the ravioli to the pan, add the butter and sage, and mix gently. Add 1/2 cup parmesan cheese and mix again. Arrange in separate bowls and sprinkle with the remaining parmesan cheese.
