Ingredients

1 cup raw red quinoa
⅓ cup olive oil
2 tablespoons red wine vinegar
1 ½ teaspoons finely chopped shallots
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
2 cups (1/2-inch) diced tomatoes, unseeded
½ cup (1/2-inch) diced cucumbers, unseeded
3 tablespoons chopped fresh mint
1 tablespoon chopped fresh oregano
1 can of chickpeas (15-ounce garbanzo beans), washed and dried
2 ounces shredded feta cheese (about 1/2 cup)
4 lemon slices

The health benefits of this ancient gluten-free grain are amazing. Red quinoa makes a wonderful salad for the main course, but you can use any color that you like best.
Prepare the quinoa according to the directions on the package, without adding salt or fat. Drain and place in a large bowl. Let cool for 1 hour.While the quinoa cools, combine the butter and the next 4 ingredients (with the pepper) in a small bowl, stirring with a whisk. Let stand for 20 minutes.Add the quinoa dressing, tomatoes, and the next 4 ingredients (except chickpeas); mix well. Add the cheese and mix gently. Serve with lemon wedges.Kids can help: With a child-safe knife, kids can slice tomatoes and cucumbers and then crumble feta.
