Red Velvet-Peppermint Swirl Brownies

Ingredients

1 (4 oz) bar of bittersweet baking chocolate, chopped
¾ cup butter
2 ¼ cups sugar, divided
4 large eggs
1 bottle (1 oz) of red liquid food coloring
¼ teaspoon mint extract
2 teaspoons vanilla extract, divided
1 ½ cups all-purpose flour
⅛ a teaspoon of salt
½ (8 oz) pack softened cream cheese
2 egg whites
2 tablespoons all-purpose flour

Red Velvet brownies with mint curl taste just as good as they look. These amazing brownies are juicy, delicious and shimmer with color.
Preheat the oven to 350 degrees. Line the bottom and sides of the 13-inch x 9-inch pan with aluminum foil so that the sides protrude 2 to 3 inches; lightly oil the foil.Heat the chocolate and butter in a large, microwave-safe bowl over high heat for 1 1/2 to 2 minutes, or until they are melted and smooth, stirring at 30-second intervals. Whisk with 2 cups of sugar. Add the eggs 1 at a time, beating until smooth after each addition. Add food coloring, mint extract, and 1 teaspoon vanilla. Carefully add 1 1/2 cups flour and 1/8 tsp salt. Pour the batter into the prepared pan.Beat the cream cheese and remaining 1/4 cup sugar in an electric mixer on medium speed until fluffy. Add the egg whites and remaining 1 tsp vanilla and beat until smooth. Add 2 tablespoons. Sprinkle with flour until smooth. Spread the cream-cheese mixture in tablespoons over the batter in the pan; mix gently with a knife.Bake at 350 ° C for 30-32 minutes or until a few moist crumbs appear on a wooden stick inserted in the middle. Cool completely in the pan on a wire rack (about 1 hour). Remove the brownies from the pan, using the edges of the foil as handles. Carefully remove the foil; cut the brownies into small squares.
