Ingredients

2 cups (3/4-inch) diagonally sliced carrots
2 teaspoons olive oil
½ teaspoon kosher salt, divided
Cooking Spray
5 tablespoons low-fat plain Greek yogurt 2%
3 tablespoons fresh lemon juice
2 tablespoons water
1 ½ tablespoons honey
¾ teaspoon ground cumin
½ teaspoon freshly ground black pepper
1 ½ cups cooked quinoa
1 ½ cups shredded grilled chicken breast, skinless and boneless
1 ½ cups seedless red grapes, halved
½ cup green onion, thinly sliced
½ cup fresh flat parsley leaves
½ cup toasted chopped almonds
4 cups mixed greens for salad

To make

Caramelized carrots and fresh, juicy grapes add a pleasant sweetness to this quinoa.
Preheat the oven to 450 degrees.Place the carrots, butter, and 1/4 teaspoon salt on a jelly dish greased with cooking spray; stir to coat. Bake at 450 ° C for 15 minutes or until cooked through.Combine the remaining 1/4 teaspoon salt, yogurt, and the next 5 ingredients (with the addition of pepper) in a large bowl, stirring with a whisk. Add carrots, quinoa, and the next 5 ingredients (via almonds); toss to combine. Place 1 cup of the salad greens in each of 4 shallow bowls; sprinkle each serving with about 1 1/2 cups of the quinoa mixture.
