Roasted Carrot, Chicken, and Grape Quinoa Bowl

Ingredients
2 cups (3/4-inch) diagonally sliced carrots
2 teaspoons olive oil
½ teaspoon kosher salt, divided

3 tablespoons fresh lemon juice
2 tablespoons water
1 ½ tablespoons honey
¾ teaspoon ground cumin
½ teaspoon freshly ground black pepper
1 ½ cups cooked quinoa
1 ½ cups shredded grilled chicken breast, skinless and boneless
1 ½ cups seedless red grapes, halved
½ cup green onion, thinly sliced
½ cup fresh flat parsley leaves
½ cup toasted chopped almonds
4 cups mixed greens for salad
