Ingredients

¼ cup extra-virgin olive oil
4 anchovy fillets, oiled, rinsed
2 garlic cloves, minced
¼ teaspoon ground red pepper flakes
8 cups cauliflower florets (about 1 large head)
Cooking Spray
2 tablespoons chopped fresh flat-leaved parsley
2 teaspoons fresh lemon juice
¼ teaspoon kosher salt

I love the nutty, tender baked cauliflower - it goes very well with the rich taste of anchovies. If you're an anchovy lover like me, use the oil from the jar instead of extra-virgin olive oil to make the anchovy sauce.
Preheat the oven to 450 degrees.Combine the first 4 ingredients in a small skillet over medium-high heat. Cook for 5 minutes or until the anchovies are cooked through. Remove the pan from the heat.Place the cauliflower in a single layer on a baking sheet greased with cooking spray. Brush the cauliflower with cooking spray. Bake at 450 ° C for 10 minutes. Drizzle the cauliflower with the butter mixture; stir to coat. Bake at 450 ° C for 25 minutes or until edges are lightly browned, stirring once after 15 minutes. Sprinkle with parsley, juice and salt.
