Roasted Grape and Feta Salad

Ingredients
1 ½ cups seedless red grapes
2 teaspoons olive oil
1 tablespoon balsamic vinegar
¼ cup chopped toasted walnuts
2 teaspoons fresh lemon juice
1 teaspoon olive oil
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
3 oz arugula
1 ounce chopped feta cheese (about 1/4 cup)
To make
Preheat the oven to 450 degrees. Place the grapes, 2 teaspoons of olive oil, and vinegar on a foil-lined baking sheet. Bake at 450 ° C for 10 minutes; let stand for 5 minutes. Put the grapes, walnuts, lemon juice, 1 teaspoon olive oil, salt, pepper, and arugula in a large bowl; toss to combine. Sprinkle with chopped feta cheese.
