Roasted Pine Nut Butter
Bookmark this page

Ingredients
1 pound toasted pine nuts
1 tablespoon canola or peanut butter, or any oil with a neutral flavor
¼ teaspoon kosher salt
To make
Given that pine nuts cost $ 35 a pound, we wondered if it even made sense to make butter out of them. Then we tried it: the fattiest, most delicate nut butter ever made, and filling in tiny pieces, so a small 2-or 3-ounce jar would make a perfect meal present, like black caviar.
Start with pine nuts, browned to a medium brown color, to fully reveal the aroma of roasting. (Be careful: they burn very easily!) To make the butter, chop the toasted pine nuts in a food processor. Add the oil and salt. Whisk until smooth.
