Roasted Salmon with Dill Mashed Potatoes

Ingredients

3 pounds baked potatoes, peeled, cut into 1-inch-thick slices
Salt and pepper
4 6-ounce salmon fillets, approximately 1 1/4 inches thick each
1 tablespoon olive oil
1 cup sour cream
½ cup milk
¼ cup finely chopped fresh dill

To make


Preheat the oven to 400°F. Put the potatoes in a large saucepan, cover with water and add 1 tablespoon of salt. Bring to a boil and cook until the potatoes are tender, about 10-15 minutes.While the potatoes are cooking, line a baking sheet with strong aluminum foil. Place the salmon fillets on the foil, skin side down. Brush with oil and sprinkle with salt and pepper. Bake until the center is opaque, 14 to 16 minutes. Remove from the oven and cover with foil to keep warm.Drain the potatoes and return to the pan. Mash over low heat until smooth. Add sour cream, milk and dill. Add salt and pepper to taste. Serve immediately with the salmon.
