Roasted Salmon with Thyme and Honey-Mustard Glaze

Ingredients

10 sprigs thyme
1 (3 lb) skinned salmon fillet (preferably lean), pitted
¼ cup rustic Dijon mustard
2 tablespoons honey
1 teaspoon white wine vinegar
2 teaspoons fresh thyme leaves
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 lemon, thinly sliced

To make

A layer of fragrant fresh thyme gives the fish a wonderful taste. Ask the fishmonger to remove the bones from the fillet and make one incision towards the fish's head.
Preheat the oven to 450 degrees.Line a baking sheet with parchment paper. Arrange the thyme sprigs in a long row on parchment. Spread the salmon skin side down on top of the thyme.Combine mustard, honey, and vinegar in a bowl. Spread the mixture evenly over the salmon. Sprinkle the salmon with 2 teaspoons of thyme leaves, salt and pepper. Place the lemon slices on top of the salmon.Bake the salmon at 450 ° C in the center of the oven for 26 minutes or until just cooked through. Serve hot or at room temperature.
