Rum-Spiked Grilled Pineapple with Toasted Coconut


¼ cup brown sugar
¼ cup spiced dark rum (such as Captain Morgan's)
1 pineapple, peeled, cored, halved lengthwise and sliced lengthwise into 12 wedges (approximately 1 1/2 pounds)
1 tablespoon butter
2 tablespoons sweetened coconut flakes, toasted
3 cups low-fat vanilla ice cream

To make

With six ingredients, you can prepare one delicious dessert in less than 10 minutes.
Combine the sugar and rum in a microwave-safe bowl. Reheat in the microwave on high for 1 1/2 minutes or until the sugar is dissolved. Spread the rum mixture evenly over the pineapple slices.Melt the butter in a large skillet over medium-high heat. Place the pineapple in the pan; cook for 3 minutes on each side or until grill marks form and the pineapple is thoroughly warmed. Sprinkle with coconut flakes. Serve with ice cream.
