Rustic Apple Tart

Ingredients
2 tablespoons unsalted butter
¼ cup brown sugar
2 tablespoons granulated sugar
4 ½ cups Sliced peeled Golden Delicious apples (approximately 1 1/2 pounds)
4 ½ cups chopped peeled Granny Smith apples (about 1/2 pound)
2 teaspoons fresh lemon juice
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1/2-ounce (15-ounce) chilled pie dough (such as Pillsbury's)
1 teaspoon iced water
1 teaspoon granulated sugar
1 tablespoon apricot jam
1 teaspoon of water

Purchased dough with a crispy crust saves time. We like the taste combination of sweet Golden Delicious and tart Granny Smith apples, but you can use any apple (or combination of apples) that you like. If you want to keep this dessert strictly kosher for our Hanukkah menu, use walnut oil instead of butter and choose a cake batter made with shortening (and free of lard).
Melt the butter in a large skillet over medium-high heat. Add the brown sugar and 2 tablespoons granulated sugar; cook for 2 minutes or until the sugar is dissolved. Add the apples and the following 3 ingredients (with nutmeg added). Cover, reduce heat and cook for 20 minutes or until apples are tender, stirring occasionally. Remove from heat; cool to room temperature.Preheat the oven to 400 degrees. Place the oven rack on the lower third of the oven.Place the dough on a sheet of parchment paper. Roll out the dough into a 14-inch circle. Place the dough and parchment paper on a baking sheet. Place the cooled apples in the center of the dough, leaving a 2-inch rim. Fold the edges of the dough to the center, pressing slightly to seal (the dough will only partially cover the apple mass). Brush the dough with 1 teaspoon of ice water and evenly sprinkle with 1 teaspoon of granulated sugar. Bake the cake at 400 ° C for 45 minutes or until golden brown.Put the jam and 1 teaspoon of water in a small bowl suitable for the microwave. Reheat in the microwave on high power for 30 seconds or until bubbles form. Brush the mixture over a warm pie. Cut into slices and serve warm or at room temperature.
