Rustic Applesauce

Ingredients
4 cups peeled Braeburn or Pink Lady apples, diced
4 cups peeled Granny Smith apples, diced
½ cup brown sugar
2 teaspoons grated lemon zest
3 tablespoons fresh lemon juice
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch of salt
2 tablespoons crème fraîche
To make
The combination of sweet casseroles and tart Granny Smits gives this applesauce a nice balance. Mashing the apples will create a thick sauce; for a more uniform version, grind some or all of the apple mixture in a food processor or blender. Fresh cream gives the sauce a soft, rich aftertaste; replace it with rich sour cream, if it is not available on sale.
Combine the first 8 ingredients in a roasting pan over medium-high heat. Cook for 25 minutes or until apples are tender, stirring occasionally.Remove from heat; mash with a fork or potato masher until desired consistency. Stir in crème fraîche. Serve warm or chilled.
