Saffron Aioli


1 ½ tablespoons water
⅛ a teaspoon of crushed saffron strands
1 clove garlic, minced
½ cup canola mayonnaise
1 teaspoon fresh lemon juice

To make

Taste and texture: garlicky, with a light honey-vanilla sweetness of saffron, balanced by a slight bitterness. Thick and creamy. Try it with: poached fish, grilled, sauteed or baked in fins; scallops, shrimp or lobster; toasted bread (as a side dish to fish soups); French fries, cooked in the oven; steamed or sauteed asparagus, broccoli or carrots; grilled vegetable sandwiches.
Combine the first 3 ingredients in a small bowl suitable for a microwave oven; reheat in the microwave on high power for 30 seconds. Allow to cool slightly. Add the mayonnaise and juice, stirring until smooth.
