Saffron Fish Stew with White Beans

Ingredients
1 tablespoon extra virgin olive oil
1 cup chopped onion
1 teaspoon ground fennel
½ teaspoon ground coriander
2 minced garlic cloves
1 sprig thyme
½ teaspoon grated fresh orange zest
¼ teaspoon crushed saffron strands
1 ½ cups water
1 ½ cups clam juice
1 can diced tomatoes, skinless (14.5 oz)
⅛ a teaspoon of salt
1-pound flounder fillet, cut into 2-inch thick slices
1 can of Great Northern beans (14 oz.), washed and dried
Fresh thyme leaves
To make
Heat the oil in a large roasting pan over medium-high heat. Add the onion, fennel, coriander, garlic and thyme sprig; simmer for 5 minutes. Add the zest and saffron, add water, clam juice and tomatoes. Bring to a boil; reduce heat and simmer for 5 minutes. Add salt, fish and beans; cook for 5 minutes. Top with thyme leaves.
