Salmon Burgers

Ingredients
2 pounds fresh skinless salmon
2 egg whites
1 tablespoon dijon mustard
½ cup fresh breadcrumbs (1 slice white bread, crushed in a food processor)
½ teaspoon kosher salt
2 tablespoons chopped fresh dill
2 tablespoons olive oil (for cooking on the stove)
4 toasted brioche buns

To make
Pass the whole salmon through a meat grinder, then put half of it in a large sealed plastic bag and mash it with a flat-faced meat grinder or rolling pin. Put all the salmon in a large bowl and mix with the egg whites, mustard, breadcrumbs, salt and dill. Shape 4 patties, each 3/4-inch thick. Place on a medium-high grill and cook for 4-5 minutes on each side. (To cook on the stove, heat the olive oil in a grill pan over medium-high heat and cook the patties for 5 minutes on each side.) If desired, sprinkle with a spicy coleslaw and serve on brioche buns.
