Salmon Fillets with Potato Chip Crust

Ingredients

¾ cup shredded potato chips, cutlet-shaped
¼ cup breadcrumbs
2 teaspoons dried dill
4 (6 oz) salmon fillets
1 teaspoon vegetable oil
Salt and pepper
1 ½ tablespoons dijon mustard

To make


Place the roasting rack in the oven in the top position, next to the broiler. Place the second grid directly below it. Preheat the grill to high heat. Cover a baking sheet with strong aluminum foil. Combine potato chips, breadcrumbs, and dill in a small bowl.Place the salmon fillets on a baking sheet. Brush with oil and sprinkle with salt and pepper. Bake on the top rack until the surface begins to brown, 7 to 9 minutes.Remove from the oven and brush the fish with mustard. Spoon the potato chip mixture onto the fillet; press it down on the fish with the back of the spoon. Return the pan to the bottom rack of the oven and bake until golden brown, 30 seconds to 1 minute. Serve immediately.
