Salted Caramel-Pecan Bars

1 cup chopped pecans
12 whole grain crackers
1 cup thickly packed brown sugar
¾ cup butter
2 tablespoons whipped cream
1 teaspoon vanilla extract
¼ teaspoon kosher salt
