2 large eggs, lightly beaten

3 oz hot italian chicken sausage, uncoated
2 cups chopped tomatoes
1 cup chopped onion
1 9-ounce bag of fresh spinach.
1 teaspoon ground black pepper
¼ teaspoon kosher salt
3 ounces shredded low-fat Italian cheese (about 3/4 cup), divided
