Ingredients
4 ounces chopped Cajun smoked sausage (such as Konekuh)
3 cups low-sodium, fat-free chicken stock
1 can unsalted tomatoes, diced, not peeled (14.5 oz)
6 cups coarsely chopped kale (about 8 ounces)
1 can navy beans (16 oz.), peeled and rinsed
To make
Cajun smoked sausage is a simple five-ingredient soup with added spices. Serve with crusty bread for a full dinner.
Preheat a large saucepan over medium-high heat. Add the smoked sausage to the pan; cook for 2 minutes, stirring occasionally. Add the chicken stock and diced tomatoes; bring to a boil over high heat. Add the cabbage. Reduce the heat and simmer for 4 minutes or until the cabbage is tender. Add the beans and cook for 1 minute or until the soup is thoroughly warmed through.
