Scallops with Capers and Tomatoes

Ingredients
12 large scallops (about 1/2 pound)
Cooking Spray
1 clove garlic, minced
½ cup dry white wine
1 tomato, peeled and diced (about 1 cup)
3 tablespoons capers, drained
2 tablespoons chopped fresh basil
¼ teaspoon salt
1 tablespoon extra virgin olive oil
To make
Spicy capers and diced tomatoes are perfectly combined with fried scallops, giving the dish freshness. Serve with angel hair pasta to complete the dish.
Dry the scallops with paper towels. Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the scallops to the skillet; cook for 3 minutes on each side or until tender. Remove the scallops from the pan; keep warm.Add garlic to skillet; cook for 15 seconds. Add the wine and the following 4 ingredients to the pan. Spoon the mixture over the scallops; drizzle evenly with oil before serving.
