Seared Scallops with Pink Grapefruit-Brown Butter Sauce

Ingredients

1 large pink grapefruit
¼ cup unsalted butter
1 teaspoon all-purpose flour
½ teaspoon sea salt, divided
½ teaspoon freshly ground black pepper, divided
12 to 16 ounces large scallops (about 10 pieces)
1 tablespoon olive oil
1 tablespoon chopped fresh green onion

To make

Deep-fried scallops with pink-grapefruit-brown cream sauce are prepared in just 30 minutes and are simply delicious! Simply fry the scallops in a pan and then drizzle them with our brown creamy citrus sauce.
Peel the grapefruit and cut it into slices with a knife. Squeeze the peel and remaining pulp to make 1/4 cup of juice.Cook the butter in a large saucepan over medium-high heat, stirring occasionally, for 3-4 minutes or until golden and nutty. Add the flour; cook, whisking constantly, for 1 minute. Gradually add the grapefruit juice. Cook for 1-2 minutes or until thickened. Add the grapefruit wedges and 1/4 teaspoon each of sea salt and black pepper. Pour into a bowl, cover and keep warm.Sprinkle the scallops with the remaining 1/4 teaspoon sea salt and black pepper. Heat the oil in a large heavy skillet over medium-high heat until it becomes hot. Add the scallops and cook for 3 minutes on each side or until the scallops are lightly browned.Drizzle the scallops with grapefruit sauce; sprinkle with green onions.
