Seared Sesame-Crusted Salmon

Ingredients
¼ cup sesame seeds
4 4-ounce salmon fillets (about 1 inch thick)
1 tablespoon plus 2 teaspoons vegetable oil

To make
Place the sesame seeds in a shallow bowl. Rub the salmon fillet with 2 teaspoons of oil and sprinkle with salt and pepper. Roll the flesh of the fillet in the sesame seeds to coat.Preheat the remaining 1 tablespoon. Heat the oil in a large nonstick skillet over high heat until golden brown, 2-3 minutes. Add the salmon fillets, skin side down, to the pan; reduce the heat to medium-high and cook until the skin is browned and the bottom halves of the fillet are opaque, about 4 minutes. Flip and cook until the fish is cooked through, about 3 minutes for medium-deep browning. Transfer the fish to plates, turning the fillet so that it is bone-in; serve immediately.
