Sesame Brown Rice Salad with Shredded Chicken and Peanuts

Ingredients
1 cup long-grain brown rice
2 cups shredded boiled chicken breast
½ cup chopped carrots
⅓ cup chopped green onion
¼ cup dry-roasted peanuts, divided
1 tablespoon chopped fresh coriander, divided
½ teaspoon salt
2 tablespoons fresh lime juice
4 teaspoons canola oil
1 teaspoon dark sesame oil
2 garlic cloves, minced
To make
Cook the brown rice in plenty of water so it doesn't get sticky. Serve this chicken salad with brown rice and lime wedges.
Cook the rice according to the instructions on the package, without adding salt or fat. Transfer the rice to a large bowl; beat with a fork. Cool. Add the chicken, carrot, onion, 2 tablespoons peanuts, 2 teaspoons cilantro, and salt to the rice; toss to combine.Combine the juice and other ingredients in a small bowl. Drizzle the rice mixture with the butter mixture; toss to combine. Arrange 1 1/2 cups of lettuce on each of 4 plates. Sprinkle each serving with 1 1/2 teaspoons remaining peanuts and 1/4 teaspoon remaining cilantro.
