Sheet Pan Pork Tenderloin with Broccoli and Butternut Squash

1 (1 lb.) pork tenderloin, trimmed
2 ½ tablespoons olive oil, divided
1 tablespoon chopped fresh thyme
2 ½ teaspoons kosher salt, divided
1 teaspoon ground black pepper, divided
6 cups fresh broccoli florets (from 2 medium broccoli heads)
4 pre-sliced fresh pumpkin nuts
1 medium-sized red onion, cut into 8 slices
1 lemon, cut in half
2 tablespoons butter

This light, flavorful dinner gives the Humble skillet an excellent taste and texture. Juicy baked pork tenderloin is covered with a nice herb glaze, and its delicious creamy tarragon-mustard sauce goes well with pumpkin oil and baked broccoli florets. Sweet baked squash goes well with savory baked broccoli, and the meat is perfect with a little sauce. Pork tenderloins usually come in two packs, so freeze one for later or double-size the recipe for more guests.
